I really enjoy looking at your street vendor video series, they bring back a lot of memories of days in and around Krungthep. The "wide stick noodles" in your Pad Siew recipe usually are not soaked, the wide kuai tiaw are usually fresh unlike the sen lek used in Pad Thai, right?
